Khow Suey is a Burmese noodle dish with coconut curry base and comes with a great variety of toppings.

Ingredients
For the curry paste
- Onion – 1 finely chopped
- Garlic – 2 tbsp.
- Ginger – 2 tbsp.
- Kashmiri Chilli – 3 tbsp.
- Schezwan Sauce – 3 tbsp.
- Lemon Juice – 1/2
- Salt to taste
For the Coconut broth
- Hesthetic Coconut Oil
- Coconut Milk - 400 ml
- Peanuts – 1/2 cup roughly chopped
- Rice Noodles – 250 gms
- Gram Flour – 1 tbsp.
To garnish use
- Peanuts – 1/2 cup roughly chopped
- Spring Onions Chopped – 1/4 cup
- Lemon Juice – 1/2
- Coriander
Method
- Curry Paste: Grind all the ingredients into a smooth paste using a blender or food processor. Add a little water while blending. Set aside.
- Use a sieve and add flour, baking powder and baking soda in a bowl.
- In another bowl add Hesthetic Coconut Oil, castor sugar and brown sugar and beat until the sugar and oil blend completely.
- Gradually, add the flour mixture to the oil mixture and knead it with milk.
- Shape the dough in 16 cookies and flatten it slightly.
- Line a baking tray with parchment paper and arrange the cookies on the tray (keep a distance of 1 inch between two cookies)
- Bake for about 12 – 15 minutes at 180°C degrees.
- Remove from the oven and let it cool on a wire rack for at least 15 minutes.
Notes
- You can also add vegetables of your choice to this recipe such as Mushrooms, Bell Peppers, Green Beans & Tofu.
